Corfu, like many Greek islands has its own history, rather like a mini country, as it was conquered by various occupiers over the years who remained on the island for strategic purposes. The conquerors are long gone but their eating habits remain and have become engrained in modern day Corfiot dishes.
The Venetians made the biggest impression on Corfiot cuisine and you can find their legacy on restaurant menus featuring delicious recipes such as the veal dish Sofrito and a peppered fish concoction known as Bourdeto. Other influences include the French and the English who in turn brought turkey and puddings to the table.In common with many Mediterranean holiday destinations Corfu has evolved dishes based on the profusion of locally grown products many of which are at the forefront of modern day flavorings such as olive oil, lemons and fresh herbs including oregano, rosemary, mint and dill.
The principal meat is Lamb which is found in classics such as Moussaka whilst pork and beef are often used in marinated form. Fresh fish, squid and shrimp are predominant on the Corfu menu along with chicken, supported by local cheeses including feta.
Many of the traditional Corfiot dishes involve slow cooking to create fabulously tasty stews. The local wine has improved substantially in recent years and of course the old favourite’s ouzo and retsina can still be enjoyed whilst on a villa holiday in Corfu.
